The bourbon character reads clearly as oak and vanilla, carried by a steady alcohol warmth that remains consistent across sips. Carbonation stays low and fine, giving the beer a smooth, coating texture that supports the density rather than interrupting it.
At this stage, we consistently pick up a black cherry note. It sits alongside a light acidity through the mid-palate and brings definition to the darker flavours. Sweetness remains well present across the sips and holds the roast and acidity together without pushing forward. As we drink, tannins show up in the aftertaste, pointing clearly toward barrel wood and, when paired with the cherry note, hinting at something close to cherry wine. That combination of tannin and roast bitterness carries through to the finish, where a mellow layer of smoke stays present as a quiet but persistent backdrop.

Across the glass, the beer keeps repeating the same sequence for all of us. Roast and chocolate lead, followed by oak, alcohol warmth, acidity, tannin, and bitterness.
